<p>Ratatouille er en grønnsaksstuing fra Frankrike. Jeg synes ratatouille er utrolig godt, og kan brukes til mye: som en egen rett i seg selv (eventuelt med brød til), tilbehør til middag, man kan hule ut en pariserloff og fylle den med ratatouille og ost og gratinere det hele i ovnen, den kan spises med ris, med poteter, med pasta, til kjøtt og fisk,  varm eller kald osv.</p>

<p><strong>Ingredienser:</strong><br />
2 løk<br />
2-3 paprika gul, grønn, rød<br />
1 aubergine<br />
1 fedd hvitløk<br />
1 squash<br />
2-3 ss olivenolje<br />
1 boks hermetiske tomater evt 4 dl fiskekraft<br />
1 ts salt<br />
grovmalt pepper<br />
1 ss frisk finhakket basilikum eller oregano evt 1 ts tørket</p>
<p><strong>Tilberedning:</strong><br />
Rens og skjær grønnsaker i båter/biter. Begynn med å surre løken i olivenolje til den er myk og blank. Tilsett resten av grønnsakene og la dem surre i olivenolje i 3-4 min. Tilsett hermetiske tomater, salt og krydder.</p>
<p>La ratatouillen trekke til grønnsakene er møre. Smak til med timian, salt og pepper.</p>

<p>Jeg burde selvfølgelig ha inkludert en oppskift, men når jeg lager disse slenger jeg bare sammen en deig (ca 50% fint mel og 50% grovt), har på det fyllet som passer og ost. Man kan bruke både ferdig pizza saus, posesaus (ala Toro), eller lage selv. I de fleste pizzabolle oppskrifter skal man smøre på fylletpå deigen, rulle den, for deretter å skjære den i biter. Jeg synes det blir fryktelig grisete, så jeg foretrekker å gjøre som på bildet: lager små &#8220;leiver&#8221; som jeg har fyllet på, og bretter deretter kantene inn. Disse er suverene både for store og små, fyllet kan varieres og ikke minst: de kan fryses slik at man har til senere. En sikker vinner i matpakka!</p>

<p>Jeg elsker focaccia! Når jeg lager focaccia fryser jeg alltid ned noe, problemet er bare at det gjerne blir tatt ut av fryseren igjen i løpet av et par dager, så det kan jeg ofte spare meg. Jeg pleier å ha oliven, hvitløk og soltørket tomat i focacciaen, men man kan selvfølgelig kutte ut noe av dette.</p>
<p><strong>Ingredienser</strong>:</p>
<p>30 gram gjær</p>
<p>6 dl lunkent vann</p>
<p>800 gram hvetemel</p>
<p>2 ss sukker</p>
<p>1 ts salt</p>
<p>hvitløk</p>
<p>litt rosmarin</p>
<p>olivenolje</p>
<p>salt</p>
<p>Evt: oliven, soltørkede tomater</p>
<p><strong>Fremgangsmåte</strong>: Løs opp gjæren i vannet, tilsett mesteparten av hvetemelet, sukkeret og saltet. Arbeid deigen til en glatt, fin deig. Tilsett mer hvetemel hvis den er for klissete (til å kjevle), og hev under et kjøkkenhåndkle på et lunt sted i en halv time.</p>
<p>Arbeid deigen sammen og kjevle den ut, legg den deretter i en langpanne (som enten er smurt eller med bakepapir).</p>
<p>Gropene i deigen lages med fingrene.</p>
<p>Jeg pleier å finhakke hvitløk, samt skjære oliven og soltørket tomat i biter, og har dette i litt olivenolje. Hvitløken, olivenen og tomatene &#8220;dytter&#8221; jeg så inn i deigen, og smører oljen på toppen, krydrer med rosmarin og godt med grovt salt. Det blir dog mindre klissete om du har ingrediensene (uten olivenoljen) rett i deigen, smører olivenoljen på og krydrer med rosmarin og salt.</p>
<p>Hev en halv time til.</p>
<p>Stek midt i ovnen ved 200 grader, ca 25 minutter. Skjær deretter brødet i firkanter (jeg pleier også å dele hver firkant i to slik at den får bunn/topp).</p>
<p>Focaccia kan spises til tapas, med pålegg, til supper, salater, gryter osv og er kjempegodt!</p>

<p>Det spises sjeldent posesuppe hjemme hos oss, jeg syntes mange av dem smaker for salt, og jeg liker uansett å lage supper fra grunnen av. En sjelden gang i blant gjøres det unntak, som her &#8211; mattermosen er fylt med ekte tomatposesuppe, ved siden av er brød og kiwi. Det er godt med noe varmt i magen på kalde dager, og noen ganger er det greit å kunne lage noe i full fart!</p>

<p>Tomatsalat krydret med Pico De Gallo kryddermix fra Santa Maria kan ikke spises for ofte, her med hjemmelagde små kjøttboller (med chili, løk, hvitløk, taco krydder), brød og epler. Jeg bør kanskje forklare mangelen på smør &#8211; jeg har aldri syntes smaken av smør er noe særlig  (med mindre det inneholder hvitløk eller hakkede urter), så derfor dropper jeg stort sett det.</p>

<p>Dagens lunsj er rester etter gårdsdagens middag: en enkel men knallgod form som min samboer har lagd. Den består av spaghettisaus (posesaus), kjøttdeig, poteter, blomkål, brokkoli, gulrot, løk, paprika,  diverse krydder samt litt ost (cheddar) på toppen. Pga potetene droppet jeg brød til, men hadde en nektarin til dessert.</p>
<p>Jeg leste forøvrig <a href="http://www.dinside.no/helse/diverse/kreft/restemiddagen+som+kan+forebygge+kreft/art783589.html">denne artikkelen</a> på Dinside.no hvor det står at gjenoppvarming at tomat/tomatsauser øker mengden lycopene som blir opptatt i blodet med 55%. Lycopene har i følge artikkelen: &#8220;vist seg å forebygge kreft, samtidig som det motvirker hjertesykdommer og diabetes&#8221;. Her er det med andre ord bare å ta vare på middagsrestene til dagen etterpå, det både smaker godt, er økonomisk og kan tydeligvis også være helsebringende.</p>
<p><em>English: Today&#8217;s lunch is leftovers after yesterday&#8217;s dinner: a simple but delicious tomato-pan, gratinated with cheddar. Spaghettisauce, potatoes, minced meat, broccoli, cauliflower, carrots, onions, sweet peppers and spice. Because it contained potatoes I skipped the bread (that I&#8217;d usually have with something like this), but had a nectarine for dessert. </em></p>

<p>I dag var det kjapp og enkel lunsj: 1 fruktyoghurt fra Yoplait, samt 1 hjemmelagd lunsjmuffin. Lunsjmuffinen er lagd av mager kesam, grov og fint speltmel, litt havregryn, brokkoli og gulrot samt litt revet ost. Veldig mettende og en god lunsj som kan oppbevares i fryseren og tas ut etter behov.</p>
<p><em>English: Today I had a quick and easy lunch: 1 fruityoghurt from Yoplait and 1 homemade lunchmuffin. The lunchmuffin had broccoli, carrot and some cheese in it &#8211; all in all a healthy lunch, and the muffins can be kept in the freezer and taken out when you need them. </em></p>
